I have a little confession to make:  I have never made a pie.  I know!!  I have always wanted to, and always buy stuff to make it, but it has just never happened.  So the other day, I finally did it!!

I would have thought my first pie would have been something sweet, like cherry (yum!).  Apparently my recent obsession with bacon has taken over, and my first pie was a little more alternative.

When I first started considered writing a blog about my family, I was recommended a wonderful site to peruse called Meet the Dubiens.  Jill does a wonderful job blogging about all the fun things she does with her kids.  The first time I visited her site, I came across a recipe for Perogie Pie, and I’ve been dreaming about it ever since.  I love that this recipe uses things like boxed mashed potatoes, and frozen pie crust.  That’s my kind of cooking!

The other night, I finally had all the ingredients I needed (I always seemed to be missing something!).  I slightly adapted Jill’s recipe, and here’s what we came up with:

Bacon? Pie? Squeee!!  Here’s how we made it:

Ingredients

.

  • 1/2 lb bacon
  • 1 shallot (or onion)
  • boxed mashed potatoes (made using instructions for 6 cups)
  • 7 cups of shredded cheese (I used colby jack, but whatever you like is probably fine)
  • frozen pie crust
  • sour cream

Directions:

  • Bake pie crust as directed.  Allow to cool
  • Cut up bacon and shallots.  Cook until slightly crispy (I put the bacon and shallots in at the same time, but that overcooked the shallots.  I would add the shallots in half way through next time).  Drain and set aside on a paper towel.
  • Make mashed potatoes as directed.  Before adding milk and potato flakes to boiling water, add the cheese. (I also added some bacon fat to the potatoes for a little extra zing!)
  • Pour mashed potatoes into pie crust, and smooth out.  Cover potatoes with bacon/shallot mix.
  • Allow to settle for about 15 minutes.
  • Cut into slices, and serve warm with a dollop of sour cream.

    Thank-you so much Lizz! I love perogie pie and all it’s boxed and frozen glory. Definitely not gourmet, but soooo good. I hope you liked it.

    I too have never made a pie, although a pie with bacon sounds fabulous. I also (rarely) make a bed or a list…

      I only ever “make” my bed when we have company, by throwing the duvet over the unmade sheets. I also hide things in there that I don’t feel like finding an appropriate place for. I make lists for everything. Then I never do the things on the list, and I just throw it away.
