Our meal schedule (dinner specifically) is a bit of a mess.  By the time we all get home, it is well after the time that normal people would have probably eaten dinner.  And then we need to cook whatever we want to eat.  Yes, we are night owls, but that still doesn’t mean that we should be eating dinner at 8:30 in the evening on a regular basis.

To combat this issue, we have a few easy standby meals that can be whipped up in no time flat.  I’m always happy to find something that can be added to that rotation.  Skylar requested something the other day that was a little different for us, but very tasty.  And adaptable for future use.  She asked for cheesy broccoli on rice.  Easy, and I didn’t even have to go to the store.

Here is how we made it (keeping in mind we are trying to make a meal as quickly as possible), but I think this can easily be adapted in about a million ways.

Ingredients:

  • Frozen Broccoli Florets
  • 5 or 6 slices of Velveeta Cheese
  • 1/2 cup milk
  • Trader Joe’s Frozen Brown Rice

Directions:

  • Steam or boil your broccoli as you would normally.  Once cooked through, set aside
  • Meanwhile, put the milk in a separate pan, and bring to a gentle boil.  Cut the Velveeta into small pieces and add to milk.  Whisk often until the cheese is fully incorporated.  For thicker cheese sauce, add more Velveeta.  For a thinner sauce, add more milk.
  • Once the broccoli and the cheese are close to being done, put the frozen rice into the microwave, and cook as instructed.
  • Layer the ingredients in your bowl/plate: Rice, then broccoli, then cover with cheese sauce.

That’s it.  Done in like 15 minutes.

It was surprisingly filling, which was a pleasant surprise, since I don’t often serve a meal without a meal portion.  I think this would work really well as a side dish too.  I bet that cheese sauce would taste really good on chicken…
