Muffin Tin Monday – Colors of the Rainbow March 7, 2011

It took a full week, but we are finally feeling better around here, and ready to get back into the swing of things.  We decided that a good theme for this week’s muffin tin would be the colors of the rainbow.  We had a lot of fun trying to figure out good food for each color we had picked out.  Here’s what we came up with:



Orange – Orange slices and apricot fruit leather flower

Purple – Grapes

Green – Pistachio cupcake

Blue – Blue tortilla chips (salsa not pictured)

Red – Farfalle pasta with marinara sauce

Yellow – Corn

Rainbow – Skittles!


If you count the milk she drank, I guess we could include white too!  Skylar pretty much inhaled everything except the cupcake.  What kid on this planet doesn’t want to eat her cupcake in favor of eating mom’s nachos instead.  Just mine I think!


The pistachio cupcakes were a really tasty twist on a traditional dessert.  They were the product of a Grammy/Skylar baking session, so I’m sorry I don’t actually have a recipe.  Let me know if you are interested, and I’m sure I can get it.
