Muffin Tin Monday – No Theme Dinner February 21, 2011

So as of this week, there are no more weekly themes given for Muffin Tin Monday (these were established by Muffin Tin Mom).  There will now be a few monthly theme suggestions.  This week has been very busy for me, so I didn’t get a chance to really put a lot of thought into a themed tin.  So instead, we went with a basic dinner tin:



Top Row (Left to Right): Edamame, Apple pieces, Chocolate/Peanut Butter Heart (Reese’s)

Bottom Row: Corn Chowder Soup, Chicken Patty, White Cheddar Pirate’s Booty


The corn chowder soup was really good.  I had a box of corn and roasted pepper soup from Trader Joe’s, added a 16 oz bag of frozen corn, and let it simmer for an hour and a half, stirring occasionally.  Even though it cooked for a long time, it felt quick because there was no prep.


Have you ever tried Pirate’s Booty? If you haven’t, you should.  It’s a great alternative for crunchy snacks, like potato chips.  It’s puffed corn, similar to cheese puffs, but somehow they don’t seem quite as processed.  This batch happens to be the Trader Joe’s version (since we obviously shopped there recently!).  I like it there, because it’s a whole $1.99 for a huge bag.

  2. Oh yum – Reece’s Peanut Butter HEARTS??? I swear, sometimes you Americans have no idea the cool stuff you get that we don’t! Then again, we don’t get buried in snow, I guess… hmm… Looks like a yummy dinner!

    Oh My–I truely wish my girl’s were not severly allergic too peanut butter, because that Reese’s Heart is too perfect for a MTM! Oh and I also wish my girl’s would eat soup, what a great way to fill a tin!

  4. Dinner looks so yummy. I love the picks too. By the way, is that Trader Joe’s White cheddar popcorn? Love that stuff.
