I thought we would do another recipe this week, since we had something very tasty for dinner last night. This is very simple, and if you’ve ever made tacos you could do this one in your sleep. The difference here is that there were several things we had to substitute with gluten free products. Thank you Trader Joes…

Here’s a few of the things we found:
- Gluten Free Taco Seasoning
- Gluten Free Refried Beans
- Gluten Free Corn Chips (the large scoopy kind)
You will also need your normal taco ingredients:
- Ground Beef, Chicken, or Turkey
- Your Choice of Toppings
- Shredded Cheese
- Chopped Lettuce
- Diced Tomatoes
- Diced Avocado
- Ect.

Cook your meat according to the seasoning packet directions. Once I read it I realized our GF Trader Joe’s packet only uses half of the seasoning, so it’s good for one more meal. Score! While your meat is absorbing all that lovely flavor, you will want to heat up your refried beans. I usually do this in a small pan on the stove, just make sure you don’t burn it.

Next you will layer in your items. I went with the beans on the bottom, then the meat, then all of my toppings. I finished it off with several of the scooping chips, which will now be used to spoon up all that taco-y goodness. Gluten free and utensil free! The final product was actually quite pretty:

Yum yum! Now if you are more of a taco traditionalist, don’t worry, I didn’t forget about you.

Now what’s a dinner without dessert?

Skylar happened to spend a little time after camp today with Mara. They took a field trip to Whole Foods, and did a little shopping in the bakery. If you live in Illinois and are ever in a Whole Foods, listen up… Swirlz Cupcakes is a bakery in Lincoln Park that includes gluten free cupcakes in their menu everyday. They have partnered with Whole Foods who carry those lovely treats in their stores. How lovely you ask…

those first 6 months of being GF are tough. tacos are one of my favorite go-to gf meals. the boys devour them. thank god for trader joe’s!
have you looked into digestive enzymes? it helps in the event of cross-contimation on product lines or even in the home. {my hubby is still a gluten-eating boar…lol}

We are only a month and a half in, so yeah it’s tough around here right now. I don’t know much about digestive enzymes in relation to a gluten free diet, but I will certainly look into it. Thanks for the tip! I will definitely pick your brain if I need some GF help. =)
